I was wondering how you change the color of an entire image so its on one scale if you will. Something like the logo at http://www.bradshawjeep.com/ Is it just something with the channels, or what?

Change your foreground color to one end of the scale, your background to the other color, then do this:

Image - Adjust - Gradient Map

You can also do different gradient maps on different selections from the image to create the "rainbow gradient" effect.
