It is very subjective, but I have found Ubuntu is great for the desktop and Debian is great for servers. Debian can be trimmed down to just the bare necessities and the apt respository is filled with well laid out packages. Ubuntu comes with all the great bells and whistles one would want on the desktop. It can be trimmed down as well, but it does not appear that its goal is to be a server OS (not that it couldn't be used in such a manner)

Most Linux distros are usable for the server. For the desktop, yes, I would recommend Kubuntu (not Ubuntu, because I happen not to like the GNOME desktop environment -- Kubuntu uses KDE). If you're planning on running servers and stuff but also using the graphical side of it, go for (K)ubuntu.
