    Above ALWAYS returns Thursday...

    Date is in the following format 2007-8-21(Year-Month-Day)

    Why isn't this working?

    You'll want strtotime($date). The date function doesn't take a string date, it takes a numerical UNIX timestamp, which strtotime will give you.
