    sometimes Google lists multiple pages on a single site...

    how can we increase the chances of this happening...?

    if the additional pages are relevant to the search terms used, it can occur that multiple pages are displayed in google. However, generally a single page is shown because this is the page which gets a lot of the incoming links, has been optimized (keyword density, etc) the best, etc. Additional pages of your site will not be shown in google just because they're there or you have an internal link to them.
