Is there anywhere I can find a list of the minimum years required to register each particular domain name type? eg. I know that .co.uk is 2 years, but I need a complete listing. Thanks.

As far as I know, they're all one year. If you're restricted to a two-year registration, it may be your registrar that's causing the issue. Check around to see what other registrars charge for the same TLD.
