How would you reserve one of these? If you have the top-level, and the second-level, how do you customize it so that it could be contact.example.com instead of example.com/contact?

When you buy a domain such as example.com, you set it up to be controlled by DNS (most likely two of them, primary and secondary)

DNS is a complex subject, but nowadays, you most likely would get a control panel to control the DNS of your newly bought domain (example.com)

From there, you basically can make any sub domain you want... you just have to add a record to the DNS. So, for example, if you wanted to make reallybiglongname.example.com, you would put in an A record

    reallybiglongname IN A 192.168.0.1

you would replace 192.168.0.1 with the IP address of your web server.

And from there... you need to setup your webserver to actually serve up content when it gets a request for reallybiglongname.example.com
