The advantage of keeping the material rather from starting from scratch is that it is going to save a lot of creative time. If you save the photos, menu structure and the copy it will make creating the new site much easier.

As far as switching from Joomla to WordPress my less than expert opinion is it will be a good move. Both have some advantages over the other but WordPress is a million times more user friendly than Joomla, particularly on a larger site.

It's a great way to waste a Saturday morning, though.
Sounds like you need some WP cron in your life: https://codex.wordpress.org/Function_Reference/wp_cron

Were I in the site maintenance game, which I am not now and intend to never be, I would hook the updater in a WP cron job, and make a local script that will request the main page for each site, which would run those tasks for me. I might even look into a plugin that can set it up for me.

Interesting idea, but I probably won't take it that far. Most of the WP sites I deal with are via one client, and it's a client I'd like to drop by the end of 2017 anyway. After that, my plan is to return to a life whereby I avoid the beast completely.
