the 3.12 upgrade is a very minor update that just fixes a few minor bugs. This update will not break any plugins.

If you are still worried, then
1: backup your database before the upgrade
    2: upgrade wordpress

    if problems occur, then

1: backup the entire wp-content folder
    2: delete database and wordpress
3: upload previous version of WP (3.1.1)
4: reinstate your backuped database from WP version 3.1.1
5: upload your wp-content folder again.

WP is pretty good at keeping backwards compatibility now, and the standard for plugin development has skyrocketed, so the use of 'hooks' is limited. I'd only ever be wary about any major release.

When WP 3.2 comes out, i'd follow my steps just in case. I sincerely hope you`ll never need to use my steps! haha
